Freezing Avocados

Thanks to the Super Bowl and the usual parties that accompany it avocados were on sale this past week.  I did not have a party planned, but I love avocados and guacamole.  I bought six and brought them home to ripen.  When they did, I sliced them and put them in the food processor.  I added six tablespoons of fresh lemon juice (one for each avocado) and processed it until smooth.

I love the bright green color.  I divided the mixture among three containers and put it in the freezer.  I can pull out a container and add in the remaining ingredients and have delicious guacamole. 

This produced no trash.  I took reusable produce bags to the grocery store for the avocados and lemons.  The leftovers of each went into the compost pile.  I like foods with less trash and no preservatives (other than nature's preservative in the form of lemon juice).  It was fairly frugal as I have about $6 in all three containers.

I might pick up a few more avocados this week before the sale ends.  I expect it will be Cinco de Mayo before I see such a good sale again.

This is a great idea. How did it work for you after being in the freezer? Thanks for sharing. I really like your blog.

Any tips for being extra frugal when times are challenging? My husband lost his job recently so I'm squeezing things even tighter. I'm pretty frugal but I'm always learning when I can.

Lyn, it worked very well. I had to stir it up good after it thawed as it still turned a little brown. After stirring well it looked just fine and tasted great.

Do you eat any meatless meals? When I need to squeeze the budget, I always look at the grocery bill first.

I was wondering about how much they browned and how long you froze them for before thawing and using them.

I recently bought way more avocados than I know what to do with(25 avocados for $5), and was planning on freezing them because I too love guacamole. Do you have any additional tips since this blog post? Some other folks on the internet recommend using freezer bags and squeezing out all the air,but I prefer using reusable tupperware contains since I don't like wasting either. But I also don't want my avocados getting freezer burn or anything because I decided to use tupperware containers. Any thoughts? Tips? etc?

I also prefer reusable containers for freezing. I had a container that was frozen about 8 months. It had gotten lost in the freezer. I did not see any freezer burn on the avocado. I found that only the top part was a bit browned. I just gave it a good stir before serving. I think that putting the avocado and lemon/lime juice in the processor helped. Everything was mixed really well. You got an awesome deal on the avocados! I would have bought way more than I knew what to do with also.
