Homemade Gnocchi



Several months ago I decided that I wanted to try making homemade pasta.  I wanted to do it on a budget though.  It seemed that gnocchi was the best place to start.  I purchased a gnocchi board, got busy with the holidays, and put off any ideas of homemade pasta.  Besides it had to be extremely difficult, right? 


 


While going through my list of recipes to try, I came across this one at King Arthur Flour for potato gnocchi.  I had all of the ingredients and some free time so I decided to give it a try.  I admit that having some experience making bread helped with mixing the dough.  Honestly it was fairly easy.  The gnocchi board made shaping the pasta really easy.  The step by step instructions were very helpful.  I quickly had an entire pan of gnocchi.


 





 


I chose to freeze the gnocchi and cook it later.  I served it later in the week with an alfredo sauce, and W loved it.  I know that I will make it again and will look into purchasing a pasta machine in the future.  For now I am happy with my gnocchi board as a simple way to make pasta myself.


 





 


One note about the gnocchi board:  When I received mine it was a bit ragged looking.  I used a small piece of sandpaper to get rid of the straggly edges.  It was a quick fix.

I've never had gnocchi, but have seen it made many times on Food Network. It's good to see you were so successful on your first try - makes me think I should give it a go, too!

I had never heard of a gnocchi board. I wanted some gnocchi so I could make a clone recipe for Olive Garden chicken gnocchi soup. All the gnocchi I priced in the store was very expensive, and I had some leftover mashed potatoes, so I looked up a recipe and made my own. I just rolled the dough into a snake, and cut about 3/4" pieces. It worked very well, and is a ton cheaper than buying it, and is quite easy to do.
